Wedges with Guacamole

Hello Lovelies,
At the moment I am often really exhausted and stressed because I have to write a really important and difficult exam this month. Therefore, my breakfast or lunch is often quite easy and quickly prepared as I often do not have a lot of time to cook as I want to study in the breaks.
Today I want to show you my recipe for these crispy potato wedges with guacamole which are quick and easy to prepare and fill you up for a long time. Enjoy!

For 2 servings

The ingredients

For the potato wedges:

  • potatoes for 2 people, about 10
  • salt
  • cayenne pepper
  • garlic spice
  • paprika spice

For the guacamole:

  • 2 little avocados
  • 5 cherry tomatoes
  • salt
  • black pepper
  • 2 tbsp passion fruit juice
  • cashew butter*

The instructions

For the potato wedges:

  1. Preheat the oven to 180 degrees Celsius.
  2. Peel the potatoes and cut them into wedges.
  3. Cook them for 5 minutes in boiling water.
  4. Drain the potatoes in a sieve and season them with the spices in a bowl.
  5. Bake the wedges on baking paper without oil for about 20-30 minutes.

For the guacamole:

  1. Mash the avocado with the passion fruit juice with a fork.
  2. Dice the tomatoes and add them to the avocado.
  3. Season your guacamole and fill it in a small bowl. If you want you can add some creamy cashew butter as well. The combination is just perfect!
