Mermaid Coconut Bars

Aloha my Lovelies,
as we had such a great weather here in Flensburg I decided to show a super summer recipe today.

Today I have these super moist Mermaid Coconut Bars for you. The perfect little fellow to accompany you to University, school or to your workplace or even the beach – but beware not to eat too much of them otherwise you might turn into a real mermaid!

For 10 little Bars

The ingredients:

  • 1 1/2 cup shredded coconut
  • 1/3 cup coconut oil, melted
  • 1/2-1 tsp Blue Spirulina Powder* / Blue Food colour
  • 2 EL coconut milk
  • 1/2 cup maple syrup

The instructions:

  1. If you live in a country with rather a cold climate you should melt the coconut oil on your window sill in the sun or on the heater.
  2. In the meantime, combine the shredded coconut with the blue spirulina powder in a mixing bowl. Add as much powder as you want to achieve the preferable colour.
  3. Add the melted coconut oil and maple syrup and mix everything.
  4. Pour the coconut milk and mix another time. I have used the one from Koko Dairy Free. The consistency should be crumbly but still moist.
  5. Press the dough in a with baking paper lined baking dish.
  6. Freeze the Bars for 1 hour.
  7. Cut it in Bars.
  8. Enjoy your little trip to the sea./li>

Mermaid Coconut Bars

The bars are not only in school a real highlight but also at university or even at a beach or pool party. For me, they taste like Bounty but without chocolate. The next time I will definitely try them with chocolate.
The Mermaid Coconut Bars are extremely quick to make and you also need just a few ingredients.
