Eat your Greens Pizza

Hello my Lovelies,
who does not know this situation: On a nice evening you sit in front of the TV and craving some pizza although you haven’t eaten anything healthy today- basically the whole week!

Today I want to show you one of my favourite healthy pizza recipes. My Eat your Greens Pizza is gluten-free as always and vegan and sugar-free as well! Enjoy! 

for  1-2 servings

The ingredients:

For the pizza crust:

  • 1 cup gluten-free flour
  • 1/2 tsp salt
  • 1 tsp yeast
  • 1 tsp FiberHUSK
  • 1/2 tsp maple syrup
  • 3/4 cup warm water
  • 1 tbsp olive oil
  • Blue Spirulina
  • Pink Pitaya Powder

For the almond pesto:

  • 1 cup fresh basil leaves
  • 1/2 cup almonds
  • 1/2 lime, squeezed
  • Salt & pepper
  • 1/4 cup water

For the pizza toppings:

  • Broccoli
  • Romanesco Broccoli
  • Green asparagus

For the cashew cheese sauce:

  • 1 cup cashew nuts
  • 3/4 cup water
  • 1 1/2 tsp mustard
  • Tumeric
  • Salt

The instructions: 

For the pizza crust:

  1. Combine the flour, FiberHUSK and the salt in a mixing bowl and make a well in the center.
  2. Add the yeast, maple syrup and the warm water into the well and wait for 5 minutes.
  3. Add about 2 tsp of the blue spirulina powder and the pink pitaya powder to colour the pizza dough (optional!)
  4. Knead the dough on a lightly floured board for about 10 minutes.
  5. Pour 1/2 tsp in the mixing bowl, place the dough in the bowl and pour the rest of the olive oil on top.

For the toppings:

  1. Wash your greens and cut them into small pieces.
  2. Bake them with a little salt and olive oil in the oven at 180 Degrees Celsius for about 10-20 minutes until tender.

For the almond pesto:

  1. Wash the basil leaves and add them with the almonds in a food processor.
  2. Add the lime juice and the spices.
  3. Pour more and more water into the food processor and mix everything.

For the cashew cheese sauce:

  1. Mix all ingredients (besides the water) in a food processor.
  2. Slowly add the water until you get the preferred consistency. Mix everything one more time.

For the Pizza:

  1. Roll the pizza dough on baking paper on a baking tray and bake it at 180 Degrees Celsius for 8 minutes.
  2. Spread the pesto on top and put your greens on top.
  3. Drizzle some cashew sauce on top and bake again for 15 minutes.
  4. Enjoy!
