Breakfast Sweet Potato with Berries

Hello my lovely breakfast friends,
Today I want to share a rather unusual recipe with you. Breakfast Sweet Potato with Berries!

Did you ever think about eating sweet potatoes for breakfast? No? I’ve never thought about it either but one fresh morning I woke up and thought: “Why not?”.

The natural sweetness from the potato is great for desserts but also for breakfast. Have fun while reading and cooking my recipe!


The ingredients: (for 1 Sweet Potato)

  • 1 big Sweet Potato
  • 4 strawberries
  • raspberries
  • blueberries
  • Mini-Kiwis
  • 2 tbsp peanut butter
  • roasted coconut chips
  • 1 tbsp cacao-nibs (e.g. Berioo)
  • cinnamon

The instructions:

  1. Preheat the oven to 180 degrees Celsius.
  2. Wrap the Sweet Potato in aluminium foil and bake it in the preheated oven for about 40 minutes.
  3. In the meantime, cut the strawberries and halve the mini-kiwis.
  4. When the potato is nice and soft, cut it in half and sprinkle some cinnamon on top. Be careful that you do not cut it completely.
  5. Add the different berries and the kiwis.
  6. Make little peanut butter nests by placing the peanut butter in the potato.
  7. For some extra chocolicious crunch. Sprinkle 1 tablespoon of cacao nibs on top of the fruits.
  8. Finished. Enjoy!
