Pancakes with coconut yoghurt

Hello Lovelies,
today I want to share one of my greatest childhood memories with you. When I was younger I was often allowed to choose what we are going to have for lunch at my grandma’s place and the choice was the same most of the time: Pancakes.

The ones from my grandma are the best pancakes that I know and that is the reason why I want to share her recipe with you. However,  I changed the recipe a little in order to make them gluten-free and optionally even vegan. I hope you have fun trying it out!

The ingredients:

For the dough:

  • 6 tsp gluten-free flour
  • 6 tsp tiger nut flour (e.g from Berioo)
  • 1 tsp baking powder
  • 1 egg / 1 half ripe banana
  • 5 tsp sugar
  • 1 tsp vanilla sugar
  • some milk (almond milk )
  • some mineral water
  • optional: 1 tsp FiberHUSK

For the topping:

  • 1/2 – 1 cup coconut yoghurt
  • 2 tsp Blue Spirulina powder
  • 1 tsp Butterfly Pea powder
  • Blueberries
  • Physalis
  • Walnuts

Instructions:

  1. Add the gluten-free flour and the tiger nut flour in a mixing bowl and mix it.
  2. Add the baking powder, vanilla sugar, FiberHUSK and regular sugar and combine everything.
  3. Place the egg in the bowl and mix everything. If you want to make the pancakes vegan- simply mash a half ripe banana with a fork and add it to the flour mixture and mix everything.
  4. Add some milk and mineral water to the mixture until you get the right consistency.
  5. Bake them in a pan.

 

  1. Combine the yoghurt and the spirulina and butterfly pea powder together until you get the preferable colour.
  2. Stack the pancakes on each other and pour the yoghurt over your tower and decorate it with blueberries, physalis and chopped walnuts.

This recipe is so easy and quickly prepared but still, it does look absolutely delicious. No matter if you have them on a Sunday morning or for tea with friends. Such a pancake tower is always a good choice and I mean – Who does not like pancakes?
